My winery is established in Celles Sur Ource. My roots are shared between the Champagne and the Burgundy, i used to learn wine there before i came back to the winery in 2012.
I take really care to the terroir of my village, it really matters to me, that's why i use to work with a Burgundy style by fostering a winemaking with only one grape, one vintage, from one parcel.
I want to make wine with strong identity which are a pure capture of my terroir, to do that, i need to acquire really nice ripeness combine to wise yield. Using this way, my wines are made 95 % in the vineyards.
In the cellar, i only help my wines with interventions limited to the minimum required by those differents vintages i met every year.
